I didn’t cause a scene because I’m not that type of person… but I came close.
I took my kid to get some ice cream after his soccer game, and since he trounced the blue team, I let him get a large cup. Large cups at this shop are two scoops, and obviously everyone knows that that means two flavors. But apparently not, according to the boomer servicing us.
My kid wanted peanut butter mocha and gummi worm buttercrunch. The boomer asks me if I could talk my kid into getting any other flavor besides the gummi worm one because he couldn’t reach the tubs in the second row without inflaming his osteoarthritis in his elbow. I understood, so I asked my kid to choose another flavor. I forget what he named next, but it was also in the second row. I ask him to name another, also in the second row. And so on— nothing in the first row appealed to him.
I ask the boomer if someone else can help us and he says he’s all alone. There’s a line out the door and I can sense people are getting impatient so I just tell the boomer to get my kid all peanut butter mocha, and while he scoops it up I tell him it’s ridiculous that a paying customer can’t get two flavors. My kid is crying a little bit too at this point and I also thanked the boomer for ruining my kids day. After the boomer struggled to scoop up the ice cream— he has to take breaks to rub his arm, so it takes like a whole minute— he hands it to my kid and mutters “entitled brat.” My kid hears that and goes hysterical. He drops the ice cream on the ground and kicks it like it was the game winning goal.
I throw my hands up and decide that’s it, and walk out. Turns out, Baskin Robins is just as good, if not better.

Boomer is definitely being a prick here, but where are the getting the "can't get two flavours" point from? The boomer didn't want your kid to get some specific flavours, not only get one flavour. If you chose two flavours from the first row it seems like they'd be fine with it, just the same as how they would also complain if you chose just a single flavour from the second row.
For the record, I agree with you completely that the boomer is totally in the wrong and you are totally in the right. If he can't scoop ice-cream, he shouldn't be working in an ice-cream shop.

I have arthritis and I sure as hell would not do a job where I stand up all day. That's just asking for trouble.

Yea my 20 something heds ass aint doing that NO way a literal boomer with arthritis is unless it's the owner wanting to be one of the guys for 10 seconds ( in which case there would be staff there too )

They’re a jackass because after several attempts to get their kid to adhere to the Boomer’s desires they got upset that half the stores inventory was unnecessarily unavailable? Or, was it the part when their kid threw a fit after being insulted by a grown adult like any other child would?

Kid didn’t act spoiled at all. Unless you count the reaction to having an old shit mock them. If you read the events of OP’s story; you’d clearly see that they did exactly that. They walked away and got ice cream somewhere else. When you find yourself in a hole it’s wise to stop digging.

As a kid who got screamed at after every achievement by braindead boomers, I sympathize with the mom and kid.
After one of the best days of your life, a lazy, shithead boomer insults you for no reason, what would you feel?
If I was the kid, I would have lobbed it at him. The boomer acted more like a child than them.
Stop making excuses for abusive, manipulative boomers.
